Spicy Kale or Beet Greens

Prep Time: 20 minutesMakes: 8 servings
Flavourful greens sautéed with onions and chilli flakes.
Ingredients:
- 2 large onions, diced (about 3 cups)
- 2 tbsp olive oil
- 2 bunches kale or beet greens (about 4 pounds)
- 4 tsp vinegar (or to taste)
- ½ tsp crushed red pepper flakes (or more to taste)
- Salt and ground black pepper to taste
Instructions:
- Sauté the onion in the oil in a large skillet or saucepan on low heat for about 10 minutes, until translucent. While the onion sautés, thoroughly rinse the kale or beet greens. Remove and discard the large stem ends, and coarsely chop the leaves.
- Add the moist kale or beet greens to the onions and cook, covered, for about 5 minutes, stirring occasionally, until the leaves are wilted but still bright green. Stir in the vinegar and red pepper flakes. Add salt and pepper to taste, and serve immediately or at room temperature.
- This dish can also be made with collard greens, mustard greens, escarole, chard or spinach.
