Chicken Recuerdos de Tuscon Gluten Free

Spicy chicken cooked with zucchini, peppers, tomatoes, corn and fresh herbs.


  • 1 full local/antibiotic-free chicken, cut-up, or thighs and legs
  • Olive oil (for frying)
  • 1 onion, diced
  • 2-3 cloves garlic, minced
  • 1 tsp cumin seed
  • Green chilies to taste, chopped
  • 2 red or green peppers, chopped
  • 1 large or 2 medium zucchini or other squash, thickly sliced.
  • 1 cup tomatoes (fresh, frozen or canned, depending on season)
  • 2 cups corn kernels
  • 2 tsp oregano
  • 1 tsp basil
  • 2 cups chicken broth or water
  • Cilantro, for garnish


  • Brown chicken in a large pot or cast-iron pan. Remove chicken, add oil, and gently sauté the onion and garlic.
  • Add the cumin seed, green chilies, peppers, zucchini and a bit of broth, if necessary.
  • Add the tomatoes, corn, oregano, basil and broth. Cover and simmer for 30 to 40 minutes, until chicken is done to the bone. Garnish with fresh cilantro.
