Cod au Gratin
Makes: 6 servings
Fillets of cod baked with mushrooms, onions and almonds in a cheesy white sauce.
Ingredients:
- 4 cups cooked cod fillets
- 5-6 mushrooms, sliced
- 1-2 green onions, chopped
- ⅓ cup sliced almonds
- 1 cup old cheddar cheese, grated White sauce:
- 3 tbsp butter
- 3 tbsp flour
- ½ tsp salt
- ⅛ tsp pepper
- 2 cups milk
Instructions:
- Preheat the oven to 350°F.
- Arrange fish in casserole dish. Add mushrooms, green onions and almonds.
- To make white sauce, melt butter in a small saucepan and mix in flour, stirring constantly. Add salt and pepper. Stir in milk. Cook and stir over medium heat until thickened.
- Pour sauce over fish and top with cheese.
- Place casserole dish in shallow pan of water and bake for 30 minutes.
