Cod au Gratin

Makes: 6 servings

Fillets of cod baked with mushrooms, onions and almonds in a cheesy white sauce.


  • 4 cups cooked cod fillets
  • 5-6 mushrooms, sliced
  • 1-2 green onions, chopped
  • ⅓ cup sliced almonds
  • 1 cup old cheddar cheese, grated
  • White sauce:
  • 3 tbsp butter
  • 3 tbsp flour
  • ½ tsp salt
  • ⅛ tsp pepper
  • 2 cups milk


  • Preheat the oven to 350°F.
  • Arrange fish in casserole dish. Add mushrooms, green onions and almonds.
  • To make white sauce, melt butter in a small saucepan and mix in flour, stirring constantly. Add salt and pepper. Stir in milk. Cook and stir over medium heat until thickened.
  • Pour sauce over fish and top with cheese.
  • Place casserole dish in shallow pan of water and bake for 30 minutes.
