Leek n' Potato Soup Vegan Gluten Free

Makes: 6 servings

Leeks and potatoes star in this hearty old-time favourite


  • 2 tbsp oil
  • 1 lb potatoes, chopped
  • 3 medium leeks, sliced
  • 2 cloves garlic, crushed
  • 6 cups stock
  • ½ cup cow /rice milk
  • 1 onion, chopped
  • Salt and pepper to taste


  • In a large, thick-bottomed pot, sauté garlic, leeks, potatoes, and onion in oil until onions are tender.
  • Add stock, bring to a boil until potatoes are done.
  • Reduce heat, add milk
  • Blend until smooth
  • Season to taste
