Chilled Cucumber-Yogurt Soup Gluten Free

Prep Time: 10 min + 30 min to chillMakes: 6-8 servings

Grated cucumber in a cool, creamy base with a refreshing hint of mint


  • 6 cups cucumber, peeled, seeded, and grated
  • 3 cups water
  • 3 cups yogurt
  • ¾ to 1 tsp salt
  • 1 clove garlic, minced
  • 1 ½ tbsp fresh dill (or 1 ½ tsp dried)
  • 1 ½ tbsp honey (optional)
  • fresh mint and chives, minced


  • Combine grated cucumber, water, yogurt, salt, garlic, dill and honey in a medium-sized bowl. Stir until well blended.
  • Chill in the fridge until very cold. Serve topped with finely minced fresh herbs.
