Vegan Chocolate Brownies
Makes: 12 servings
Rich brownie decadence that's fair and respectful to all creatures
Ingredients:
- 1 ½ cups unbleached flour
- ½ cup cocoa
- 1 ½ cups brown sugar
- 1 ½ tsp baking soda
- ¾ tsp baking powder
- 1 tsp salt
- ¾ cup coffee
- ¾ cup soy milk
- ⅓ cup vegetable oil
- ½ cup walnuts, roasted and chopped
- ½ cup carob chips Glaze:
- 7 oz (210 g) dark, fair-trade chocolate
- 5 oz (150 g) vegan margarine
Instructions:
- Mix flour, cocoa, brown sugar, baking soda, baking powder and salt
- In a separate bowl, mix coffee, soy milk and vegetable oil
- Combine wet and dry ingredients. Add walnuts to mixture.
- Pour mixture into greased 9" by 9" pan.
- Sprinkle carob chips on top.
- Bake for 25 minutes at 325°F or until inserted knife comes out clean
- Cool the brownie on a wire rack.
- In double boiler melt chocolate and vegan margarine
- Whisk together until smooth
- Pour and smooth over surface
- Place pan in fridge to set. Once cool, divide the pan into 12 squares
