Steamed Partridgeberry Pudding

Makes: 6 servings

A wholesome steamed pudding featuring beautiful red partridge berries with a thick honey-sweetened sauce.

Ingredients:

  • 1 ½ cups flour
  • 3 tsp baking powder
  • ¼ tsp salt
  • ¼ cup butter
  • ¾ cup milk
  • 1 ¼ cups partridgeberries
  • Sauce:
  • ½ cup honey or sugar
  • ¼ cup water
  • 1 tbsp flour
  • 1 tbsp butter

Instructions:

  • Sift dry ingredients into a bowl; rub in butter
  • Add berries and then milk, stirring lightly to make a batter
  • Pour into a greased 1 quart mold
  • Place over boiling water and steam for 1 hour
  • Sauce:
  • Combine honey, water and flour in sauce pan over medium heat and boil until thickened
  • Remove from heat and stir in butter.
  • Pour over pudding before serving.
