Steamed Partridgeberry Pudding
Makes: 6 servings
A wholesome steamed pudding featuring beautiful red partridge berries with a thick honey-sweetened sauce.
Ingredients:
- 1 ½ cups flour
- 3 tsp baking powder
- ¼ tsp salt
- ¼ cup butter
- ¾ cup milk
- 1 ¼ cups partridgeberries Sauce:
- ½ cup honey or sugar
- ¼ cup water
- 1 tbsp flour
- 1 tbsp butter
Instructions:
- Sift dry ingredients into a bowl; rub in butter
- Add berries and then milk, stirring lightly to make a batter
- Pour into a greased 1 quart mold
- Place over boiling water and steam for 1 hour Sauce:
- Combine honey, water and flour in sauce pan over medium heat and boil until thickened
- Remove from heat and stir in butter.
- Pour over pudding before serving.
