Old-Fashioned Bread Pudding

Prep Time: 10 min + 35 min to bakeMakes: 6-8 servings

Old bread reinvigorated in this sweet, chocolately old-fashion favourite

Ingredients:

  • 3 to 4 packed cups cubed bread (OK if stale or frozen)
  • 1 ½ cups semisweet chocolate chips (optional)
  • 3 eggs
  • 3 cups milk
  • ⅓ cup sugar (more or less to taste)
  • ½ tsp salt
  • 2 tsp vanilla extract
  • Optional toppings:
  • Berry Sauce
  • Ice cream
  • For berry sauce:
  • 1 cup fresh (or frozen, defrosted) berries (rasp-, black-, straw-, blue-)
  • 1 to 2 tbsp sugar
  • A few drops of fresh lemon or lime juice

Instructions:

  • Preheat oven to 350°F. Have ready a 9 x 13 inch baking pan.
  • Spread the bread and chocolate (if you choose to add it) in the pan.
  • Beat together the remaining ingredients. Pour this custard over the bread.
  • Bake about 35 minutes, or until firm but not dry. Serve warm or at room temperature with berry sauce and/or ice cream.
  • To make berry sauce: <
  • Place all ingredients in a blender or food processor, and purée.
  • Strain through a fine sieve to separate out and discard the seeds. Taste to adjust sugar and lemon juice.
  • Transfer to a container, cover tightly, and refrigerate. This sauce keeps very well for a week or longer.
