Fruit Shortcake Gluten Free

Makes: 8 servings

A colourful, fruity dessert featuring local, seasonal fruit and whipped cream that is a treat for the eyes as well as the palate!

Ingredients:

  • 12 buttermilk biscuits (gluten free option)
  • ADD ¼ cup sugar and 2 tbsp vanilla to biscuits
  • 1 ½ cups whipping cream, very cold (important)
  • Sugar to taste
  • 3 cups chopped fruit like strawberries, peaches, or blueberries

Instructions:

  • Make the biscuits according to recipe, adding the sugar and vanilla.
  • Chop fruit (sprinkling with sugar if desired)
  • Beat the cold whipping cream using a whisk, eggbeater, or an electric mixer until the cream barely holds a soft peak. Don't over whip.
  • Cut the biscuits in half and top with fruit and whipped cream.
  • Hints:
  • Peaches are delicious sprinkled with brown sugar (about 2 tbsp, or to taste), and finely chopped crystallized ginger (about 2 tsp) and a bit of boiling water (about ¼ cup) to create a glaze.
  • You can store whipped cream, covered and refrigerated, for several hours. If it separates, beat it a little to pull it back together.
