Apple Cinnamon Cake Vegan

Makes: 12-16 servings

A warm, fruity treat made with local apples and a hint of cinnamon for a delightful dessert.

Ingredients:

  • 5 cups apples, peeled and chopped into small chunks
  • 1 ⅓ cups sugar
  • ½ cup oil
  • 2 eggs (vegan substitute: 2 ripe bananas)
  • 2 tsp vanilla
  • 1 cup whole wheat flour
  • 1 cup white flour
  • 2 tsp baking soda
  • 2 tsp ground cinnamon
  • 1 tsp salt
  • 1 cup nuts (optional)
  • Topping:
  • ⅔ cup sugar (white or brown)
  • ¼ cup milk (vegan substitute: soy or nut milk)
  • 1 tbsp flour
  • ⅓ cup powdered icing sugar

Instructions:

  • Preheat oven to 350°F. In a bowl, combine apples and sugar.
  • In another large bowl, combine dry ingredients (flours, baking soda, cinnamon, salt, nuts). Stir in wet ingredients (oil, eggs, vanilla). Add apple-sugar mixture and mix well.
  • Pour batter into a greased 9 x 13 inch baking pan. Bake for 50-60 minutes (until toothpick inserted in centre comes out clean).
  • While cake is baking, heat sugar, milk and 1 tbsp flour to boiling, stirring occasionally. Remove from heat. Mix in powdered sugar. Drizzle over hot cake.
  • Option: serve with vanilla ice cream or yogurt.
