Classic Corn Bread

Hearty cornbread with cheese, herbs and whole corn kernels
Ingredients:
- Butter or margarine (to grease pan)
- 1 cup cornmeal
- 1 cup whole wheat flour (use rice flour for gluten free option)
- 2 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 cup buttermilk or yogurt
- 1 egg
- 3 tbsp sugar or honey
- 3 tbsp melted butter or margarine
- 1 cup corn kernals, frozen or fresh
- ½ onion, finely minced
- 1 tsp dried basil
- ½ cup cheddar cheese, grated
Instructions:
- Preheat oven to 350F. Grease an 8-inch square pan (or a 9-inch cast iron skillet) with butter or margarine.
- Combine the dry ingredients in a medium-sized bowl. Combine the wet ingredients (including sugar or honey) in a separate bowl. Stir the wet ingredients into the dry, mixing just enough to thoroughly combine. Spread into the prepared pan.
- Bake for 20-25 minutes, or until the edges are golden and the centre is firm to the touch. Serve hot, warm or at room temperature.
