Classic Corn Bread Gluten Free

Hearty cornbread with cheese, herbs and whole corn kernels


  • Butter or margarine (to grease pan)
  • 1 cup cornmeal
  • 1 cup whole wheat flour (use rice flour for gluten free option)
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup buttermilk or yogurt
  • 1 egg
  • 3 tbsp sugar or honey
  • 3 tbsp melted butter or margarine
  • 1 cup corn kernals, frozen or fresh
  • ½ onion, finely minced
  • 1 tsp dried basil
  • ½ cup cheddar cheese, grated


  • Preheat oven to 350F. Grease an 8-inch square pan (or a 9-inch cast iron skillet) with butter or margarine.
  • Combine the dry ingredients in a medium-sized bowl. Combine the wet ingredients (including sugar or honey) in a separate bowl. Stir the wet ingredients into the dry, mixing just enough to thoroughly combine. Spread into the prepared pan.
  • Bake for 20-25 minutes, or until the edges are golden and the centre is firm to the touch. Serve hot, warm or at room temperature.
