Hard to Beet Dip

A creamy, zesty dip made from local beets
Ingredients:
- 28-oz of canned, roasted or steamed beets, skinned and sliced
- 1 garlic clove
- ⅙ cup (40 ml) plain yogurt
- ⅛ cup (30 ml) tahini (sesame-seed paste)
- 1 tbsp lemon juice
- ½ tsp salt
- pepper, to taste
Instructions:
- Drain the beets. Remove the skin from the garlic clove.
- Place the beets, garlic, yogurt, tahini, lemon juice, salt, and pepper in a food processor. Process until the mixture is smooth and well blended.
- Serve in ¼ cup (50-mL) servings. Carrot sticks, celery sticks, and apple slices go well with this dip mixture.
