Fish Cakes
Makes: 6 cakes
Golden brown cakes of local fish and potatoes
Ingredients:
- 1 lb saltfish, freshened and flaked (try Off the Hook for NS sustainable seafood)
- 3 cups mashed potatoes
- 1 onion, finely chopped
- ¼ tsp ground pepper
- 1 egg
- Butter or oil for frying, as needed
- Garnish: parsley and a dollop of your favourite chutney
Instructions:
- Combine all the ingredients and mix well.
- Form into small patties
- Heat butter and fry the patties until they are heated though and golden brown on both sides.
- Serve with garnish of your choice
