Nova Scotia Hodge Podge
Makes: 8-12 servings
Simple but tasty vegetable chowder with potatoes, carrots, peas and beans.
Ingredients:
- 24 small red-skinned potatoes
- 24 baby carrots
- 1 cup snow peas
- 1 cup peas, fresh or frozen
- ½ lb yellow wax beans
- 2 cups corn kernals, frozen
- 1 ½ cups milk
- 2-3 tbsp flour
- 1 tsp salt
- ½ tsp pepper, to taste
- 1 tbsp butter
Instructions:
- In a large pot, boil the potatoes until tender. Add the carrots and cook for 10 minutes more.
- Drain the water, add the snow peas, peas, wax beans, and corn and set aside.
- In a small bowl, mix the flour into the milk to form a smooth paste. Stir into the vegetable mixture.
- Return to pot to the stove and cook on medium heat for about 20-30 minutes until all the vegetables are tender. Stir regularly to ensure that the flour/milk mixture is smooth and does not form lumps. Add the salt, pepper, and margarine. Serve hot.
