Nova Scotia Hodge Podge

Makes: 8-12 servings

Simple but tasty vegetable chowder with potatoes, carrots, peas and beans.

Ingredients:

  • 24 small red-skinned potatoes
  • 24 baby carrots
  • 1 cup snow peas
  • 1 cup peas, fresh or frozen
  • ½ lb yellow wax beans
  • 2 cups corn kernals, frozen
  • 1 ½ cups milk
  • 2-3 tbsp flour
  • 1 tsp salt
  • ½ tsp pepper, to taste
  • 1 tbsp butter

Instructions:

  • In a large pot, boil the potatoes until tender. Add the carrots and cook for 10 minutes more.
  • Drain the water, add the snow peas, peas, wax beans, and corn and set aside.
  • In a small bowl, mix the flour into the milk to form a smooth paste. Stir into the vegetable mixture.
  • Return to pot to the stove and cook on medium heat for about 20-30 minutes until all the vegetables are tender. Stir regularly to ensure that the flour/milk mixture is smooth and does not form lumps. Add the salt, pepper, and margarine. Serve hot.
