Pear & Apple Salad with Cranberry Vinaigrette

Makes: 8-10 servings
Pears, apples and nuts on a bed of tender greens with a fruity vinaigrette.
Ingredients:
- 12 cups mixed salad greens
- 3 pears
- 2 apples
- ½ cup lemon juice
- ¼ small turnip, grated or matchstick slices
- ½ cup your choice of nut (walnuts, pecans, almonds, etc.), coarsely chopped Vinaigrette:
- 1 cup apple cider vinegar
- 1 cup cranberry juice
- ½ cup minced dried cranberries
- 2 tbsp minced shallot or red onion
- 4 tsp sugar
- ¼ tsp chopped rosemary
- 4 tsp olive oil
- Salt, to taste
- Cracked pepper, to taste
Instructions:
- Combine the cider vinegar, cranberry juice, cranberries, shallot, sugar, rosemary, olive oil and salt and pepper. Let the dressing stand for the flavors to meld.
- Core and slice apples and pears into bite sized pieces. Put fruit in a dish, add lemon juice and enough water to cover the fruit. Set-aside.
- Wash greens in very cold water and spin dry. Just before serving, drain the pears and apples well. Toss together in a large bowl with the salad greens and turnip. Sprinkle with nuts.
- Add dressing and toss well to coat greens, or serve salad with dressing on the side.
