Leek n' Potato Soup

Makes: 6 servings
Leeks and potatoes star in this hearty old-time favourite
Ingredients:
- 2 tbsp oil
- 1 lb potatoes, chopped
- 3 medium leeks, sliced
- 2 cloves garlic, crushed
- 6 cups stock
- ½ cup cow /rice milk
- 1 onion, chopped
- Salt and pepper to taste
Instructions:
- In a large, thick-bottomed pot, sauté garlic, leeks, potatoes, and onion in oil until onions are tender.
- Add stock, bring to a boil until potatoes are done.
- Reduce heat, add milk
- Blend until smooth
- Season to taste
