Bruschetta
Makes: 8-10 servings
Toasted baguette slices topped with a rich tomato basil sauce
Ingredients:
- 1 ½ - 2 lbs (3 cups) tomatoes
- ⅓ cup olive oil, or more to taste
- ⅛ cup fresh basil or ½ tbsp dried basil, or more to taste
- 2 garlic cloves
- 2 green onions
- 2 x 24-inch whole-grain baguettes
Instructions:
- Preheat oven to 375ºF.
- Wash the tomatoes and dice into uniform pieces. Mince the garlic, finely chop the green onion, and cut the basil leaves (if using fresh basil).
- Mix the tomatoes with the oil, basil, garlic, and green onion.
- Cut each baguette in half lengthwise and then cut each half into 6 equal portions (for a total of 24 slices).
- Place the baguette pieces on the baking tray and toast the cut surfaces in oven until lightly browned (2-4 minutes).
- Cover each baguette piece with some of the tomato mixture. Lightly press down with a spoon to hold in place.
