Chilled Cucumber-Yogurt Soup 
Prep Time: 10 min + 30 min to chillMakes: 6-8 servings
Grated cucumber in a cool, creamy base with a refreshing hint of mint
Ingredients:
- 6 cups cucumber, peeled, seeded, and grated
- 3 cups water
- 3 cups yogurt
- ¾ to 1 tsp salt
- 1 clove garlic, minced
- 1 ½ tbsp fresh dill (or 1 ½ tsp dried)
- 1 ½ tbsp honey (optional)
- fresh mint and chives, minced
Instructions:
- Combine grated cucumber, water, yogurt, salt, garlic, dill and honey in a medium-sized bowl. Stir until well blended.
- Chill in the fridge until very cold. Serve topped with finely minced fresh herbs.
