Apple Cinnamon Cake
Makes: 12-16 servings
A warm, fruity treat made with local apples and a hint of cinnamon for a delightful dessert.
Ingredients:
- 5 cups apples, peeled and chopped into small chunks
- 1 ⅓ cups sugar
- ½ cup oil
- 2 eggs (vegan substitute: 2 ripe bananas)
- 2 tsp vanilla
- 1 cup whole wheat flour
- 1 cup white flour
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1 tsp salt
- 1 cup nuts (optional) Topping:
- ⅔ cup sugar (white or brown)
- ¼ cup milk (vegan substitute: soy or nut milk)
- 1 tbsp flour
- ⅓ cup powdered icing sugar
Instructions:
- Preheat oven to 350°F. In a bowl, combine apples and sugar.
- In another large bowl, combine dry ingredients (flours, baking soda, cinnamon, salt, nuts). Stir in wet ingredients (oil, eggs, vanilla). Add apple-sugar mixture and mix well.
- Pour batter into a greased 9 x 13 inch baking pan. Bake for 50-60 minutes (until toothpick inserted in centre comes out clean).
- While cake is baking, heat sugar, milk and 1 tbsp flour to boiling, stirring occasionally. Remove from heat. Mix in powdered sugar. Drizzle over hot cake.
- Option: serve with vanilla ice cream or yogurt.
